Ann's Baked Cod in Parchment Paper

1 lb. frozen Cod filets

16 grape tomatoes, halved

1/4 of one medium sliced thin sweet red pepper

1 shallot, thinkly sliced

2 baby zucchini, sliced thin-medium

1/2 tsp. garlic

1/2 tsp. Italian seasoning

1/4 tsp sea salt

1 tsp. capers (optional)

Black pepper to taste

2-3 TBS. butter

 

Preheat oven to 400 degrees

 

Cut 4 pcs. of parchment paper approximately 12 inches long.  Put 2 pcs. of the parchment down and put about 1/4 of the butter on the middle of each paper.  Lay 2 filets or half the package on each paper.  Season the filets with about 1/2 of the garlic, pepper, salt and italian seasonings on each of the two papers.  Divide the vegetables in half and put on top of the fish in each paper.  Add the remaining 1/2 of the seasonings. Add the remainder of the butter.  Put the remaining 2 sheets of parchment over the first two.  Crumple up the paper on the outsides of the mounds.....to look like a large round packet. (It doesn't have to be beautiful).  Move each packet to a cookie sheet.

Bake for about 30 - 40 minutes.

Recipes yields 2 servings.
