-Chop up a variety of vegetables (broccoli, carrots, parsnips, onions, green beans, sweet potatoes, Daikon radish, leeks, cauliflower, golden beets, winter squash)

-Add olive oil, salt, pepper, andy other spices you want (she uses turmeric, ginger, sometimes   tarragon)

-Sprinkle with a little lemon or lime juice.

-Put in an oven-proof dish.  Stir to mix everything together, cover with foil, and bake for on hour at 400 degrees.
