1 sweet potato will serve 2
Scrub sweet potates and cut in half lengthwise.
Sprinkle with cinnamon, nutmeg, and/or ginger (anti-inflammatory spices)
Brush generously with coconut oil and place coconut oil side down on pan
Bake in oven for 30-45 minutes, or til tender.
Length of time will depend on size of potatoes. Check for tenderness.
Works well in a toaster oven, too.
